Rare cuts such as chuck rib and chuck roll, which are known for their fine fat marbling and rich meaty flavors, are used for this dish, and tender braised in our original blended soy-based sauce.

Braised in a sauce that combines the stock of two different fish shavings and dried sardines, white wine, soy sauce, and other seasonings, the rich flavors of this precious wagyu is brought out to its fullest extent.
About Ozaki Beef
Ozaki Beef is a much-sought-after wagyu raised by the legendary cattle farmer Muneharu Ozaki at his farm located within the rich natures of Miyazaki prefecture. Only 30 cattle are distributed to the Japanese market each month, resulting in its rarity. Where typically the cattle are shipped out approximately 28 months after birth, Ozaki cattle are shipped at 30 - 34 months based on a unique method that is likened to "aging of meat while alive", which contributes to the delicate and balanced fat marbling and sublime flavors.
