About the chef
Shinichi Sato was born in Hokkaido in 1977.
He went to France in 2000 and honed his culinary skills at acclaimed restaurants such as Astrance, Pierre Gagnaire, and then at Mugaritz in Spain, before opening his restaurant Passage 53 in Paris in 2009.
He was the first Japanese chef in Paris to win two Michelin stars in 2011, which he maintained for the next eight years, before closing the establishment in 2019 to set out on a new endeavor. He opened Blanc in Paris in October 2023.
