The edo SWEETS series takes traditional Japanese sweets and ingredients to create masterful desserts with a modern twist. Visually stunning with immaculate layers of green and white, the “Sweet Red Bean and Matcha Cake” is a featured item for this fall. Premium matcha from Uji, Kyoto, the famed provenance of high quality green tea, is used to make the rich green cream that is full of aroma with a hint of bitterness that leaves a pleasing aftertaste. The velvety almond milk cream, together with the chewy shiratama dumplings, harmonizes perfectly with the subtle and elegant sweetness of prime red bean and brown sugar paste.
The “Matcha Cream Puff” is another not-to-be-missed item for matcha lovers this fall. Matcha-flavored soy milk custard cream, sweet red bean paste and gelée, "kuromitsu" (molasses) syrup gelée, and whipped cream made with Uji’s matcha and white chocolate, are sandwiched with a choux pastry also made with Uji matcha. Kelp salt is the secret ingredient, adding an accent that enhances the harmony of delightful flavors.
