Chou Hommage is the latest masterpiece by Pierre Hermé from his “Fetish Hommage” series which he dedicates to patissier Gaston Lenôtre whom he apprenticed under during his younger years. Chestnut Chantilly cream and pear compote is sandwiched with crispy pastry and decorated with sablés bretons using chestnut powder. Indulge in the rich savor of chestnuts and the varying texture it provides in a bite, as only Pierre Hermé can deliver.
