Since 1934, Vic Bergeron's eponymous restaurants have transported guests from the daily grind to a tropical paradise. Ahead of his time as always, the "Trader" chose to offer Chinese dishes alongside the then contemporary Continental cuisine, creating the original fusion menu decades before it would become a trend. Following his culinary curiosity along the ancient spice route, he collected recipes to bring back to Trader Vic's, and his eclectic cuisine defined fine dining for decades. Today, Trader Vic's restaurants exist across the globe, continuing the tradition with an ever-evolving menu featuring dishes from the Mediterranean, the Middle East, Asia, and Japan.
Trader Vic’s Tokyo first opened its door in 1974 and has been whisking guests away to an island paradise with authentic Polynesian artifacts from Papua New Guinea and Tahiti gracing the interior where juicy spareribs and steaks cooked in the signature wood-fired oven are brought over to be feasted upon while sipping tropical cocktails such as the “Mai Tai” that was originally created by the “Trader” himself in 1944.

The “Magic” Oven

魔法の薪窯

Trader Vic's wood-fired ovens can be traced back two thousand years to the Han Dynasty era. Called the “Magic Oven”, it stands approximately two meters (six and a half feet) in height. The subtle smoky flavor and rich aroma rendered by indirect radiation heat of around 400°C are the secret ingredients that make our signature spareribs and steaks an unforgettable dish.
